This Delicious Salad was inspired by a recent visit to “The Ginger Man in Greenwich, Ct“.
They served it with a creamy Ginger vinaigrette.

It was so delicious we purchased two for dinner that evening. So below is my take on this wonderful healthful salad. I added a couple of ingredients that we enjoy.
- 4 Cups CurlyKale | 1 Can Chick Peas (Goya)
- 1 cup minced Peppadew Peppers OR 1 Red Pepper – raw – minced
- 1/4 Onion – finely minced
- 1 cup Pecans whole (spiced)
- 1/4 cup – finely shredded parmesan cheese
- 1/4 cup – finely minced purple onion
(I use my small veggie chopper to accomplish that task quickly. - 1 Tablespoon White Sesame Seeds
Dress with Cream Dressing of your choice … I made the dressing below.
1/2 cup fat-free, plain Greek yogurt
1 tsp fresh, grated ginger root
2 cloves fresh, minced garlic
1 tsp reduced-sodium soy sauce
1 Tbsp extra virgin olive oil
1-2 tsp lemon juice
SPICED PECANS
2 tablespoons unsalted butter
1 teaspoon ancho chili powder
1 teaspoon kosher salt
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
Freshly cracked black pepper
1 cup pecan halves
